What Are Some Tips for Healthy Living? Chef Todd Asks the Experts.

I really need some tips for healthy living. The New Year is in full swing, and like I said earlier this week during my 7 Tips for Healthy Cooking, I feel like crap. Perhaps it’s not JUST the food I eat. Maybe there are items in my environment that could be affecting my mood, health and wellness.

I’ve got the food and nutrition part covered, being a former Executive Chef at a large hospital, but I wonder what other tips for healthy living I can incorporate into my daily lifestyle. While I may be an expert on cooking, I’m not an expert on all the other elements that go into a healthy lifestyle.

Luckily, I have a very good friend, Ben Greenfield who IS an expert on these things. Ben is a triathlete, former body builder, and health and nutrition expert. He has taken all the skills he’s learned over many years from his training routine and brought them into the household.

Ben and Jessa are a great couple, because she has helped further simplify all the things Ben has learned into a comprehensive plan for creating a healthier life, lifestyle, and smarter children. Yes, healthier and smarter children through controlling your environment. I needed to know more.

So, I called Ben and Jessa on Skype recently to ask them for a few of their tips for healthy living that I might incorporate into my life to increase my energy level, brain power, body function, and reduce toxins in my environment.

The healthy lifestyle expert husband and wife team gave me some great suggestions during this video phone call, and even offered an opportunity to join the Ben Greenfield Fitness Inner Circle to get even more information and support.

Since I’ve been feeling a bit sluggish and irritable lately, Ben’s first suggestion was to examine HOW my body is using the food that I’m supplying to it. He says I might be eating healthy foods, but not enough variety of food to supply essential vitamins that my body needs. A lack of the proper fuel can mean that my “engine” isn’t running smoothly.

Ben says that Vitamin B is essential to the way the human body metabolizes fat. It’s a cheap and simple way to boost your body’s function, as Vitamin B should cost less than a month. Ben spoke about omega-3 and omega-6 elements in food and cooking oils like he was reciting his ABC’s. He really knew what he was talking about, but I had no idea what he was saying. Greater research is needed on my part.

Jessa advised that I use coconut oil in my cooking, as this has the right type of Omega’s my body may need. Coconut oil is better metabolized by the body, and has a higher smoke-point, making it harder to burn things during sauté. That’s a great suggestion I can immediately implement.

When I told Jessa that I have air fresheners in my home, the kind that plug into the wall, she said “get rid of them!” It never dawned on me that my household environment could be contributing to my general health and energy level. “Air fresheners and scented candles can coat the nasal passages, and cause allergic reactions,” she warned.

“Clean with white vinegar instead of bleach” was another easily accomplished tip for healthy living from Jessa. White vinegar absorbs odors, is non-toxic, and has a better “clean” smell than the hospital scent of bleach. Jessa also has great recipes for home made cleaning products and disinfectants that will save your household budget and reduce toxicity levels in your home.

“The trick is making changes that are cheap, do-able, practical, and appropriate for your lifestyle”, says Ben. “You don’t need to buy expensive supplements or turn your home into an expensive iPod health-information device.”

“You can take charge and make your body and your home a healthier place to be, you just have to know where to start,” was the final and perhaps best advice Ben Greenfield gave me during the call. He made me feel better by knowing I have the power to change these things and help myself to feel better.

As our time came to an end, I felt guilty because I “stole” so many great tips for healthy living from Ben and Jessa. This is what they do for a living. They help thousands of people all over the world to be healthier, more vibrant, get sick less, and improve the lives of their children as well. They are not “hippies”, they’re just like you and me. However, they’ve been living a healthy lifestyle for many years and will share their approach with you.

10 Romantic Dinner Ideas From a Chef Who Loves His Wife

It’s easy for me to share 10 romantic dinner ideas with you, because I cook this way almost every night. I only cook what I’m inspired to create, and my wife, Heather has always been the muse behind my creativity, from culinary college until today.

The most romantic meals have three elements; they are visually appealing, they are pleasing to the palate, and they include aphrodisiac ingredients for their effects, or just for conversation value.

For centuries, many foods have been associated with aphrodisiac qualities. Can certain foods actually excite you more than others? Perhaps there’s more myth than medicine behind most of these stories, but other foods have been proven to have biological reactions similar to being in love.

Here’s my top 10 romantic dinner ideas and why they made the list:

1) Raw (or almost raw) Fish – <em>Seared Ahi Tuna with Steamed Asparagus and Jasmine Rice </em> – Raw fish can contain high levels of iron, perfect for testosterone production. Plus, Asparagus is packed with potassium, calcium, and Vitamin E, giving strength and stamina to the body. Plus, asparagus looks sexual. I’ll leave it at that.

2) Black Beans – <em> Sauteed Grouper, Black Beans with Goat Cheese, Sauteed Green Beans with Red Peppers </em> – Black beans were outlawed by the Catholic Church in the 15th century because they were too nubile, too reminiscent of a fetus, and thus would excite passions and create sin. Black beans are high in protein and are said to increase fertility.

3) Oysters and Clams – <em> Baked Clams or Oysters Casino</em> – Shellfish have long been associated with fertility, and oysters a particular favorite of legendary lovers like Cassanova. Modern science tells us that oysters, clams, mussels and other bi-valves are loaded with zinc, key to performance for both sexes.

4) Scallops – <em>Poached Scallops over Brown Rice</em> – Oysters have gotten most of the lore and fame of aphrodisiac qualities that remain today. However, Scallops were thought the most potent fertility food even before oysters. The scallop shell became the symbol of fertility to medieval Christians. Aphrodite, the Greek goddess, as well as Venus, the Roman goddess of fertility and love are both associated with scallop shells through timeless artwork.

5) Herbs and Seasonings – <em> Fresh Tomato Pie with Basil Chiffonade</em> – Herbs and spices have always been rare and expensive, until modern day. Most explorers of centuries past were in search of herbs and spices. The more rare the item, the more lore and myth that surrounds it. However, fresh herbs release intoxicating aromas that awaken many senses beyond taste.

6) Eggs – <em>Eggs Benedict with Hollandaise</em> – Eggs ARE the symbol of birth. It’s just about the only embryo we actually eat. It’s not surprising that they’ve long been associated with passion and fertility, as it was thought raw eggs consumed before consummation increased sexual vigor and fertility. Today, it’s known that the high quality protein found in eggs metabolize quickly in the body and aid in cell structure.

Plus, if you make Eggs Benedict for a loved one, I guarantee positive results!

7) Avocado – <em>Poached Salmon with Angel Hair Pasta and Guacamole</em> – The aphrodisiac lore behind avocados comes from its appearance. At the same time, they were seen as resembling a testicle by the Aztecs, and thought to be too suggestive of the curves of a woman to many other ancient cultures. The truth is that avocados have the highest level of protein you can find in a plant. Only animal proteins are greater.

8) Shrimp and Shellfish – <em>Shrimp Cocktail with Fancy Sauces</em>- One of the simplest meals to assemble, but the most effect from a romantic dinner idea standpoint, simple steamed shrimp can be one of the easiest and best meals. Lobster, crabs, shrimp and other shellfish are high in iron and essential fatty acids that are said to improve performance. An array of dipping sauces will give you a wide variety of exciting flavors, and an opportunity to share.

9) Hot Peppers – <em>Hot Wings with Fresh Cut Fries</em> Capsaicin, the heat in hot peppers, increases heart rate, dialates blood vessels, and deepens breathing. Eat some hot wings, or Indian Food, and your body will react as if you’re in love.

10) Strawberries – <em>Chocolate Covered Strawberries or Strawberry Crepes</em> – Strawberries ARE the signal of Spring all over the world. They arrive when all the birds are singing, and the bees are gathering honey. The heart shape and sweet red juice of strawberries have given them special place in aphrodisiac lore. Combining strawberries and cream or chocolate gives you two elements to excite. If you feed strawberries to your loved one, then you’re using them to their full effect.

To enjoy the great flavor and romantic qualities of chocolate, you don’t have to wait for dessert. Adding Chocolate Chip Pancakes or Chocolate Scones to breakfast, Cocoa Mole Chicken BLT at lunch, and Mole Pesto Shrimp for dinner will enable you to have Chocolate at Every Meal.

Just because my wife supported me through culinary school so I could follow my passion doesn’t mean I owe her a lifetime of dinners. She may think so, but she doesn’t realize that learning to cook is not only a way to enjoy my passion, but it’s a way to express passion as well.

I’m excited to create new meals using aphrodisiac foods. You don’t need to be a professional chef to prepare a meal for the one you love. You don’t need to be Cassanova to be romantic. You just need some romantic dinner ideas and the rest will follow.

Fast Dinner Ideas From Your Kitchen Cabinet

Fast dinner ideas come from the combination of quick cooking methods and the ingredients you have on hand. Planning and cooking meals for your family can be frustrating when you depend on written recipes that command specific ingredients. Sometimes you have the items, sometimes you don’t.

A quick dinner recipe frees you from the kitchen faster, but a mastery of just a few basic cooking methods will give you endless dinner ideas.

In today’s video, I’m going to let you look over my shoulder as I make dinner in my own home. Why do I do this? Because I want to transform as many frustrated recipe followers into home kitchen masters as possible!

Every night, I hurt my arm patting myself on the back, saying “if everyone could cook like this, they’d look forward to planning dinner and they’d never run out of dinner ideas.” If you agonize over what to make for dinner every night, just watch what I do and substitute the ingredients you desire.

Today’s Shrimp and Cannellini Bean Florentine is a dish I just made up 10 minutes ago. I looked into my pantry, peered into the refrigerator, and created a fast dinner idea from the ingredients I already had.

Here’s what I found in my cabinet to create the dish:Olive oilOnions, slicedSpinach leavesGarlic, mincedShrimp, Peeled and DeveinedCannellini beansDiced Tomatoes

Stove top sauté is the quickest method for getting dinner done quickly, but the most important part is assuring that the pan is hot first. A few drops of water from your fingers that evaporate immediately on the pan shows it’s hot.

When you add just a tablespoon of olive oil to the pan, swirl the pan to cover the entire bottom with oil. The fat in sauté is used to transfer the heat from the source to your food. Remember, you’re not deep frying. Just a small amount is necessary.

Sliced onions are sautéed in the hot pan, adding their flavor to the olive oil. When they are translucent and sweating, add the fresh spinach leaves to the hot pan. Spinach will break down, releasing its moisture and quickly wilting in the pan. Minced garlic is also sautéed with the spinach.

Now, you can add any protein product you’d like. I use shrimp, but you could certainly choose chicken, beef, or tofu. None of those will slow down our process, it’s still a fast dinner idea regardless of what ingredients you choose.

After adding a can of Cannellini beans and diced tomatoes, I want to change the cooking process from the direct source heat underneath the pan to an indirect moist heat caused by placing the lid on top. The lid traps moisture and begins to steam all the ingredients.

Changing from direct dry heat to indirect moist heat is the most important step in this process. This helps retain moisture and combine flavors in a single pan. Change the ingredients if you’d like, but follow the method and you’ll create your own fast dinner ideas.
